Played Perc/Mid at Vanilla launch, and Perc/Alb after SI. Seems like Hib is underpopulated so wanted to roll up one of these. Based on server trends how will I be of most use to the realm?

Tbh neither of them.
Enchanters? We have hundreds of them already.
Every group needs one bard and two druids... a warden? Not really, better get that BM instead.

Atm and for a long time Hibernia will need bards, druids, bms and heroes.

I would definitely agree with us having a ton of Enchanters. However Wardens are also a needed class. As @Smilo stated here, BM's, Heroes, Druids and bards are definitely needed but we need wardens as well. PBT is awsome and since they don't have shield spec at this patch level, not a ton of people are playing them but they are still definitely needed.

Dont get me wrong warden isnt a bad class but... needed?
If i have a solid 7/8 i might very well invite one but its not the first class i look for when building a group... and not even the second or the third.
When i look at a warden i see a naturalist who had the chance to become bard or druid... and didnt.

Say i have: druid druid bard eld hero bm bm i can invite a warden and he will do well but another hero will do just as well.

In a typical 8v8 setup, sure I get that. However they are needed for tank groups and are useful for raids. They're definitely not the best class in the realm but having a warden even in rvr isn't a completely bad thing. Been running with one in rvr and it's been a good experience. PBT and resists are nice.
